I think any culture that has lived through the bubonic plague has a fairly reasonable basis for considering rats to be yuck. All cultures have disgust for one type of food or another, for a variety of reasons, but invariably connected to avoiding illness.

This is simply an inflammatory framing intended to garner attention.
